It's almost Christmas!

Oops! Apparently I've already failed at maintaining a daily blog. My life isn't interesting enough to write about everyday haha. This week, however, has been extraordinarily exciting for me. On Monday, we were offered a house on base... andddd it was the housing area we wanted! Military base housing can vary greatly from base to base and even throughout different areas of base. So there are certain areas that aren't so desirable and others that are pretty nice. We lucked out and got one of the nice ones! It's 3 bedroom, 2.5 bath, 2 car garage. We sign our lease and get the keys on March 2nd. It's a ways away but at least it's a peace of mind to know where we're going to be living in three months. The move itself will be bittersweet. I really like our little house we're in right now but when I say it's little, it's pretty little. Our furniture fits in here but nothing else could. And I've come to discover as a married lady that a separate dining room is important to me - something this current house doesn't have. So our new house is about 140 sq. ft. larger and has a separate dining room. Win!

My job search has been unsuccessful lately. I was one of the many college graduates with a false sense of hope and the foolish idea that doors to jobs would just swing open. NOT. Especially here in California. But I thought to myself, "Heck, I have a dual major, double minor, and my M.B.A. I'll be alright." Then I realized I had no idea what I wanted to do with my life. Fail. I applied at the Superior Court here in our area and am feeling good about that one though. Keeping my fingers crossed.

Apricot Glazed Chicken

  • 2 boneless skinless chicken breast halves (1/2 pound)
  • 1/4 cup apricot spreadable fruit
  • 1-1/2 teaspoons light soy sauce
  • 1 teaspoon Dijon mustard
  • 1 teaspoon honey
  • 1 teaspoon butter, melted
  • Coat a broiler pan with cooking spray; place chicken on pan. Combine remaining ingredients; brush half over the chicken. Broil 5-6 in. from the heat for 5 minutes. Turn chicken over; brush with remaining apricot mixture. Broil until juices run clear. Yield: 2 servings.

Julia Childs ... except with Asian food

Hello all,

It's 2:00 in the morning and guess who's still wide awake? This girl! Nothing extraordinary happened today. I woke up and have been running various errands and doing work around the house nearly non-stop. Ever since I started working out semi-regularly I have more energy and take less naps. I'm going on almost a week - must be a record. How sad.

I prepared and rolled a ton of Lumpia (filipino eggroll) today while watching "Now and Then". It's been a good ten years since I'd last seen that movie. Still cute. Currently playing is "Julie and Julia" ... I would cook through someone's cookbook if I wasn't so picky. I'll never be able to find a cookbook where I just so happen to like all of the recipes. I love asian food though so maybe an asian cookbook if anything. Didn't have an actual dinner, just the Lumpia. Then decided at midnight to make Creamy Berry Muffins (recipe below). They were quick, easy, and yummy. Not a huge fan of the cream cheese although I did still eat it.

I've got to get up earlier than usual so that's all for now. Enjoy the song and recipe.

Creamy Berry Muffins
1 (7oz) package berry muffin mix
1 (3.5oz) package dried blueberries
1/4 cup regular or fruit-flavored cream cheese

Prepare batter and muffin pans according to package directions for berry muffin mix, stirring package dried blueberries into batter. Spoon batter into prepared muffin pans, filling two-thirds full. Drop 2 tsp. cream cheese onto center of batter in each muffin cup. Bake and cool muffins according to package directions.

Another Ordinary Day...

So my Krispy Kreme doughnuts that I was anxiously awaiting in my last post didn't happen :-( By the time I was finally able to fall asleep it was around 5:30 a.m. and when my alarm went off I couldn't convince myself to move. Looks like I will be making the hour long drive to get some on my own sometime within the next week weeks. Talk about a true foodie.

Nothing out of the ordinary occurred today. Slept in, ran a few errands, came home and was tempted to sleep again but decided against it and worked out instead. The new elliptical we have sure is a butt-kicker! The ones at the gym are much easier. The movie of today was an independent film from 2009 called "Wake" ... not too bad, but not something I would buy. With Netflix though, I rarely buy movies unless it's something I have to add to my collection. Different storyline though... girl regularly attends strangers' funerals and meets and falls in love with the fiance of one of the dearly departed.

I enrolled in another upcoming LSAT prep course. I'm preparing to buckle down and handle business properly. I'm going to have to start scheduling times to study because I'm so anal about my calendar that if something is in there I feel obligated to do it. I also need to continue on with my job search. I spent several weeks looking at Craigslist just to find out afterwards that a majority of jobs listed are SCAMS. Wonderful. Who can you trust now days?

Well, bills need to be taken care of and checking accounts balanced so that's all for now.

Blogging attempt number one...

It's been nearly ten years since I've been a part of the blogging community (shout out to Xanga if you're still around). I looked back at those old posts a few years ago and read, reminisced, and hit DELETE before anyone else could glance back at what was of the utmost importance to my 14 year old self.

It's nearly 4:00 a.m. and as per my usual, I can't sleep. Tossed and turned before finally giving up and deciding creating a blog sounded ideal. At approximately 7:30 I will be on my way to purchase Krispy Kreme doughnuts from a fundraiser. Never craved them when they were located down the street from me in Kansas but now that the nearest one is an hour away here in California their sugary, glazed goodness will be the highlight of my morning.

Up until the last week, I'd nearly forgotten what rain looked like. But it's been wet and rainy here for the last week so I took advantage of the lazy weather to the fullest. I may have gotten off of my couch all of 8 times. You'll soon learn I have an addiction to Netflix. It's the best $9/month investment I've ever made. Watched the following:
  •  A few episodes of "Dexter" - LOVE this show. I love anything with dark, witty humor. This is my current guilty pleasure.
  • "Legion" - I'd heard good and bad about this movie. I'm siding with the good. Liked it, didn't LOVE it, but it definitely had a different take on "angels" ... if those were angels, what on Earth did the "demons" look like? 
  • "The Bodyguard" - I was all of about 7 years old the last time I saw that movie. Pre-cracked out Whitney was on fire. 
  • "Anastasia" - Just realized today that this is NOT, in fact, a Disney movie. Still Disney quality though. Note to self: Research the real Anastasia.
